Generally, cut flowers just before they reach full bloom for the longest vase life. Below are a few tips on specific popular flowers.
Cosmos; Once you see color in the flower head, it can be cut.
Marigolds; Look for flowers which are already open.
Sunflowers; Cut anytime after the first colored petals begin to rise from the face.
Tithonia; Make sure these are fully open for best results.
Zinnias; Gently wiggle the stem and ensure the stem remains stiff. Wiggly stems are not ready yet.
Determine the stem length that you need, and cut just above the nearest node. A node is the spot on a stem that another branch is coming off of.
Cut the stems at a 45 degree angle (diagonally) to maximize the surface area for water intake. This helps the flower stay hydrated and help it keep it's longest vase life.
Strip all of the lower leaves, and any that you do not need for aesthetics. They will rot below the water line and dehydrate the flowers above it. Some flowers, it is easier to clip leaves off using shears (sunflowers). Other flowers, it is easy to strip them using your hands (zinnias). With one hand, gently grab the flower near the stop of the stem, and with the other, gently wrap your thumb and first finger around the stem on top of the first leaf. Pull your second hand down with a loose grip to remove the leaves.
